You must use the Dynamics palette. Either drag the dynamic to a note or select a note and double click the dynamic.
go to view, select pallettes from the menu (or F9). A palette will pop up on the left side, you will see dynamics in the list, hit the arrow for it to go down. Then click on a note in the sheet music where you wish to add the dynamic, double click the dynamic in the palette and it should be added.
In addition, if you want dynamics like ffffff and pppppp, then go to View > Master Pallet.
