Can't get straight rhythm back
I accidentally selected "swing" rhythm when writing a piece, so I turned "swing" off to get a straight rhythm during playback but it's still playing a swing rhythm. Why is this???

There is an easy workaround, see #301103: 'Straight' text does not work, since all options in the "Swing settings" tab are unchecked
It's not a workaround, it's how you do it :-). That is, if you want a text to affect swing - either turn it on or off, as opposed to leaving it unchanged as most text would - you need to have the checkbox turned on. That tells the playback engine to pay attention to this text when it would otherwise be ignored. Now, if you want the actual playback effect to be "turn it off", you make sure the "Off" radio button is selected.

Was a workaround :) to the Straight system text not working, see the different comment in the issue.
And will be fixed by the PR 5717 from Howard-C
Right it is exactly what we have to do before the creation of this new Straight system text.
As you can see, I had updated some days ago the Handbook : https://musescore.org/en/handbook/3/swing#swing-off

Understood, sorry for the confusion. I was unaware of the existence of the new Straight text on the palette and thought people referring to text they created themselves.

No worries Marc, we have all understood now how to use the swing settings :)
