Shouldn't soprano lines not have eights tied together?
As in, shouldn't consecutive soprano eigths have their tails show individually rather than be tied together? Isn't their tying together from the piano environment?

Correct.
I'm in 4/4.
There is already an outstanding feature request to have more control over default beaming, so I hope to see that some time. But FWIW, the convention of not using beams in vocal music except for melismas seems to dying out. Most modern editions of vocal music uses beams, in my experience. I guess the main except exception are newer editions of older hymns, which continue to use flags in many cases. Anyhow, I definitely agree it should be possible to set that as a default. But it is simple enough to select all then double click the No Beam icon as a workaround for now.
