Many scores (on the piano part} show a small courtesy note to the left of a note when it has been changed (flat or sharp) in the previous bar, How can I enter this?

I believe that you are referring to accidentals, like placing the sharp sign in parentheses. To do that, click the accidental itself (not the entire note) and on the accidentals palette double click the parentheses. If the notes pitch changes the parentheses will go away.
To add the courtesy accidental itself, just use the icons either on the main note input toolbar or the palette. Enter the note, then click the toolbar icon or double click the palette icon.
