Note that by default, you would almost never get two separate 1/8 notes - MuseScore already adds beams where appropriate. But if you do accidentally find yourself in that situation, the Beam Properties palette is indeed the way to go there (as well as being the way to break beams where needed). Do be sure you have actually added eighth notes and not quarter notes - no amount of messing with beam properties will turn quarter notes into eighths.
