It's entirely possible I'm doing something wrong but the tabs for electric bass make very little sense. The strings are set up as they should but they're making notes that don't make sense. Plucking the E string should produce an E note but here it makes a C, and everything follows from that. Is there something I'm missing?

please attach a sample score, images don't really help in troubleshooting (but do for demo)
You miss only that the bass instrument is written with a bass clef. And so, the fourth string it's not a C (etc.) but a E (etc.) See: https://en.wikipedia.org/wiki/Clef
The status bar, at the bottom left of the screen, by selecting this string shows this.
Or via the new feature of note names included in the notehead.
