It was not obvious even to me, an experienced user, that if one wants to use all the symbols you don't see otherwise, one must create and populate a "custom palette". This is a problem.
It's been that way ever since. And you don't need to do that, you can always use the symbols from the master palette. Having them I'm the workspace just may make it more convenient.
Hauptwerk, which generally runs for weeks or months without being shut down or crashed, has a command to write out any state that has changed. Verbum sap...
You can also just press "Z" to go straight to the Symbols palette within the Master Pallet, that way you don't need to add the Symbols pallet to a workspace.
I always wind up there by accident and get annoyed when ESC doesn't dismiss it (a Mac feature). Finding what you want in that symbolic sea is daunting; "once you have found it, never let it go", to paraphrase an old song...

I lost the custom palette hours later when it crashed. How can I ensure that the workspace is written out?

MuseScore should have written out that workspace, not sure why it may not have for you

It didn't used to close on ESC, but it does now. See #275479: Master Palette doesn't close on ESC in linux.
