adding text, such as Chorus above the staff
I want to write above the staff at the appropriate places "Chorus" or "Bridge". Can I only do this in the middle of staff?

Ctrl+T; Select, open Inspector deselect automatic placement, set the offset.
I'd recommend using rehearsal marks for this (Ctrl+M). Shouldn't be any need to disable autoplace or to manually adjust anything - default position should be good.
