Once I have created a score, how do I edit the Copyright information which appears in the footer?

File / Score Properties. This lets you set the metadata that is what the default footer uses. You can also instead edit the footer directly in Format / Style / Footer.

To be clear, you can't edit the copyright metadata there, but you can just edit the footer itself to no longer use the copyright metadata (delete the exisiting text "$:copyright:" and replace it with the literal copyright). But this isn't as good a method in general, it's actually useful to have the copyright metadata correct as it can be exported to other formats.

The easiest way to edit the copyright is to edit the copyright field in score properties. If you want new lines in the copyright, then enter it into a program such as notepad, copy it and paste it into the copyright field of the score properties (use ctrl+v) and it will be displayed in the head or footer as long as $:copyright: $C or $c is included in it.

To be clear: normally this would already be there by default. Looks like either you or someone else who previously edited this score removed it when they customized the footer to also not use different footers on odd & even pages. Anyhow, what you see when you hover isn't the actual content of the field - is a big giant "tool tip" showing you a list of things you can then enter yourself. When your score clearly shows is that the footer has been modified to only have the copyright on even pages, but also, to not use that at all and just show the odd footer on pages. You simply need to add it to the odd ones as well, as shown above. And then you can decide if you also want it to appear on the even pages. If the score will always just be the one page, obviously, that won't matter.
