Above chord, below chord option would be nice.

Because I think it is convenient and a part of music. Better than having two slurs and putting one above/below the chord and setting it where it can touch the note, I'm sure.
REMEMBER: I am trying to transcribe and match everything with a Beethoven Piano Sonata and I will tell you this, Beethoven loved to "two-slur-note" with his music.
Also, I thought we could beam before an after a system break in the score.

Consider showing an example of this notation to ensure you're not actually requesting ties; of which indeed multiples can go within a single chord, up to one for each note in it.

You can flip the position of a slur either in the inspector, or using the shortcut 'X' which will just about flip anything your select.

Why can the notes be connected by the slurs by default (not by the stems), or have an option in the inspector that can connect the notes, rather than the stems?

Similar things have been suggested, like allow start and end notes on a slur to be specified so you won't normally need to flip a slur after you add it. Someone declared this archaic though I've seen enough of it that it should be an option.

It's not really clear to me what you mean here. The default already is to put slurs on the notehead side if the stem directions are consistent. And if the stem directions are not consistent, then there is no such thing as the notehead side or the stem side; both sides have noteheads as well as stems. But in any case, "X" flips from one side to the other, or if you prefer using the Inspector, change the Direction.

So if there is some other case you are missing, we'd need you to attach a sample score to demonstrate the issue.

Anchoring a slur to the selected noteheads is a very reasonable suggestion for an extra option, and it is indeed of interest to anyone trying to make a faithful transcription of an older edition. As pointed out by @mike320: "This is possible in MuseScore by adjusting the slur positions but it sometimes fights you until you turn off auto placement."

Here's an example, showing an original edition (Kralik, not Beethoven), the required layout of the transcription, and how MuseScore does it by default.

OK, I see. There is a little confusion here. MuseScore doesn't actually have any concept of attaching slurs to individual notes, only to the full chord. So it isn't really about notehead vs stem, it's about whether the slur is attached to an individual note or to a chord. That's definitely a known limitation that has already been discussed. I thought this was a new request for something different that I wasn't understanding.
