I added an incorrect amount of measures. I then wanted to permanently delete those empty measures and can not figure out how. I used to be able to right click (on my Mac) and click on delete measures. Now not only is that not an option when right clicking but I can't find a kew command short cut to get it to happen. Why is that?
I have the latest MuseScore update, and the latest MacOS update on my 2019 MacBook Pro.

You have probably generated parts. You can't delete measure if you have done this.
You can delete measures, or any selected range, whether parts exist or not. probably you are looking for the older and more limited "remove measures" command, now it is more powerful and can remove any selected range, so that is what the command is called. it's also in the Tools menu, and also the Ctrl+Delete shortcut works as always (could possibly be Cmd+Delete on macOS).
