The Inspector is how you change the color of pretty much anything in MuseScore. If you wish to make a single staff text red, for example, just click the text then change the color in the Inspector. If you then wish all staff text to be red, hit the "S" icon ("set as style") next to the control. If you wish to create red staff text off, create one, then Ctrl+Shift+drag it to the palette for future reuse.
