OS: Windows 10 (10.0), Arch.: x86_64, MuseScore version (64-bit): 3.6.0.451380634, revision: 10dee08
Open the attached score in 3.5.2 and the current RC. Click on a chord symbol in both cases and inspect the setting in Preferences > Note input > Play notes when editing. The "Play chord symbol when editing" box, formerly unticked, has become ticked.

What do you mean by "formerly unticked"? You mean in 3.5.2, or in the beta of 3.6? Can you give precise steps to reproduce this using a single release?
The file was created in 3.5.2. "Play chord symbol when editing" was unticked. When imported into the 3.6RC, the same file has the same preference ticked and the chord symbols sound on editing.
Release and rc don't share their preferences.
And this setting is not stored in the score
Oops. I've correct the previous post ("unticked" to "ticked"). Check again. "Stired"?
If "Play chord symbol when editing" is ticked, they do exactly that, they sound
3.5.2 and 3.6RC don't share the preferences, you switched it off in 3.5.2, but the defaukt is on, as as such it is in 3.6 RC
