You mean pizzicato, surely? (original post said pizzacato). On the Change Channel tab you select from the drop-down for Arco, Pizicato or Tremolo.

Works fine for me. What soundfont are you using?
OS: Ubuntu 21.04, Arch.: x86_64, MuseScore version (64-bit): 3.6.2.548021370, revision: 3224f34

  1. No need to add these staff texts manually, just take those fron the text palette.
  2. The instrument you apply it to needs to support that, piano does not, violin, viola, cello, etc. do.
  3. If you still can't get it to work, attach the score

As mentioned, in order to do more than guess, we'd need you to attach the score. But as it is, my guess is, your instrument is not actually one of the stringed instruments for which this is defined. Perhaps it was created as a different instrument and the playback sound was changed to be that of a stringed instrument, but that's not what you need - you need to actually change the instrument, in Staff/Part Properties.
