I added a part name (just a J, because I was going to go in and edit it later), and now it won't let me change it at all. It'll let me add a new part name, but it just puts it over the old part name. The only way I can fix it is to make a new musescore file. I have it attached, and you can try, but you can't edit the part name (the J).

That score doesn't have any (linked) parts (i.e separaty tabs, created via File > Parts), just a main score (containing to instruments, or, confusingly named, parts)
Only thing you did ccreate is a partName (of "J") in the title frame.

As mentioned, you don't actually have parts here, but the partname you added is perfectly editable like any other text, just double-click.
