How to make the sound of violin smooth over long notes?
I connected two whole notes with tie and the sound (dynamic?) of violin and viola shakes over time.

You mean that there's a slight tremolo?
Also be sure you added a tie and not a slur. Could be that what you are hearing is normal vibrato. If you continue to have trouble, please attach your score and say which note you mean. Then we can understand and assist better.
