Adding notes changes "actual" measure duration unintenionally
I have a piece notated in 6/8, where the "actual" measure duration is 6/8 (photos included). However when I try and add an eighth note to an already existing chord, musescore automatically places it the beat before and changes the "actual" measure duration to 7/8. Anyone know why this is happening? In the example below I'm trying to add the D natural on top of the Bb, on beat 4 of the measure. But musescore keeps inserting it as an extra beat?

I'm not 100% following what you are trying to do, but here's a couple of possibilities:
You might be in "Insert" mode instead of the default "Step Time" mode. Look at the button which toggles input mode (left of the note duration buttons). Is it the note and a plus sign icon? Or the pencil icon? In most cases, you want to use the pencil, or "step time" mode when inputting notes.
Another possibility is that you need to use Shift+D to add the note to the chord.

That's what it was! Got toggled onto insert mode for some reason. Thanks for the help. Just trying to add a note to an already existing chord and it wouldn't let me. Fixed now.
