What if I don't want to have beams connecting the quarter, eighth, and sixteenth notes. Can I do that before I start writing the song? Or do I have to click on each one individually and then choose the beam type?

Check the time sig properties
The default grouping within beams is defined in the time signature properties. Having adjusted it to your liking, you can add the time signature to a palette for future re-use.
Of course, you can also adjust the beaming on individual notes using the tools in the beaming properties palette
