THE SCORE BOUNCES AROUND THE SCREEN, HOW DO I GET IT TO STAY STILL DURING PLAYBACK

I inadvertently clicked something somewhere and now the score always hides itself under the palettes menu, which I want to leave open all the time

It sounds like you have inadvertently undocked your palettes window. Normally, it is docked and the score will never go behind it. To redock it, simply drag it to the docking station that appears at the edge of the screen when you start dragging it.
You can also tell MuseScore not to move the score to follow the playback cursor - just click the corresponding icon in the toolbar.
