It's not surprising preferences aren't remembered if you force quite, but it should be fine on normal exit. Are you saying it's not for you? What version of MuseScore? Does this happen even if you exit immediately after starting?

MacOS 11.1, MuseScore Version 3.6.0. Any time I open MuseScore after closing, whether using the red X button, clicking on the dock icon and pressing "quit", or using force quit through MacOS. It seemed to be a bug where MuseScore was trying to read from a previous user folder that had been deleted. MuseScore was defaulting to that user folder in preferences, and resetting all paths n the preferences page seems to have fixed it.
