Thanks Mike. I tried using that menu, but the remove was grayed out for some reason. I solved the immediate problem by exiting without saving which, on reopening MuseScore, left me with a version that did not have the extra staff.

For future reference, you have to have either an instrument or staff (a staff on an instrument with more than one staff) selected for Remove to not be gray. There also has to be more than one staff or instrument in the score.

how do you delete a tab on musescore when it has opened two tabs?

If you mean deleting a second TAB (tablature) staff, follow the instructions posted above:
Open the instruments dialog by pressing i, click the staff and then click remove and OK.

If you mean you opened two scores when you meant to open only one, you can close whichever you don't want with the "x" on the tab, or File / Close. If you meant the score has two parts in addition to the main score, and you wish to remove one of the parts, go to File / Parts.
