While the song is playing, you can move the mixer's slider for that instrument when it gets to the part in the song - just like using a studio mixing console.
If you want to notate the volume change into the score itself (and also for playback), use Dynamics.

thanks so much for replying. Actually that wont work for me. i have 3 different movements (3 individual files and each file has its own mixer setup). What i want to do is combine the scores but change the mixer setting as i go from one movement to the next (but not on the fly as it were)

The mixer isn't intended for that sort of thing - it's strictly for creating the proper balance globally. For changing how loud an instrument is form one moment to the next, use dynamics. That is their purpose, that's what human musicians reading the score would need to see as well.
