beam--is it possible to set no beams by default
I sometimes prefer to have no beams for the bulk of the notes in a piece. Is it possibly to set the default to "no beam"?

You can set the defaults as described in the Handbook under "Time signature" - each time signature can have its own default beaming.
But it's probably easier to leave the defaults alone but set "no beam" all at once when you're done (Ctrl+A to select all, then double click the "no beam" icon).
