Opening old scores I worked on in Musescore 3 changes the formatting so that only half of what used to fit on Musescore 2 now fits on Musescore 3. My score has 5 parts with lyrics and theres a giant chuck of empty space on the lower half of each page.

MuseScore 2 projects should display correctly on the updated musescore.
3.0 will certainly render 2.x scores differently, this is to be expected.
Here it mainly is the lyrics bottom margin, used in 2.x to avoid collision, but no longer needed in 3.0, so can get set back to thedalt or even smaller. Also dynamicy, and hairpins yoou'd better place above stavv to avoid the lyrics and some rehearsal marks.
All by design, whether to import thet lyrcis bottom margind better is under discussion in another issue
