Playback keeps bugging out when I use "Strings" or "Don''s Strings" when there are tremolo's, or fast note occurrences.

Change String instruments in the mixer to Strings instead of picking the specific instrument.

I'm putting the status to a more reasonable setting according to the guidelines until we learn more. I suspect the problem is that you have short notes and slow strings selected as the sound in the mixer (F10). If your soundfont doesn't have slow strings, slow violins etc. as options, the attack on the recorded notes is not sharp enough and the short notes do not play back well. I suggest either using fast instruments or a different soundfont to fix your issues.
