I was told that this programme allows you to play individual staff for voice parts, but I'm able to find the tool that allows me to do that. Is there something that I'm missing?

The Mixer (F10) allows you to mute as many instruments as you want or "solo" as many instruments as you want to either silence or allow to play only the instruments you want to hear. In other words, you can solo 2 instruments and you will only hear those two instruments.
