You can change beaming on a note-by note basis using the beam properties from the pallet - see https://musescore.org/en/handbook/3/beams

You can change the default beaming by using a time signature with the beaming pattern you want. This requires that you first create the custom time signature before adding it to the score. See https://musescore.org/en/handbook/3/time-signatures
One you have the custom time signature you can add it to a pallet for future use.

I tried to use the beam tool, but I am missing something. I made a mess of it and eliminated the first icon in the beam window somehow.
I made a screen recording, but I can't seem to upload it. No mov or mp4 files allowed? I tried selecting multiple chords and clicking the beam icons. I also tried dragging.

If you deleted an icon accidentally, best to reset the palette by right-clicking the title and choosing that option.

To use the beam icons or any other palette icons, select a note in your score, then click an icon in the palette. So if you have a note that currently starts a beam and you'd like it to be connected to the previous group, click the "beam middle" icon. Or if you have a note that currently is in the middle of a beam group but you'd like it to start a new one, click the "beam start" icon.

If that doesn't help, please attach the score, and describe step by step what you are doing and where it's going wrong, then we can understand and assist better.

I wouldn't worry about video, it's seldom very helpful compared to the score and clearly written steps to reproduce a problem. But for the record, as I noted elsewhere, in the cases where for whatever reason it seems like a video might also help. just upload elsewhere and add a link here.

As an aside:
After so much time spent with the program, I'm still surprised that it hasn't evolved on this point: namely, that we are forced to make infinite and incessant round trips with the mouse from the palette to the score, and vice versa (ditto for Inspector)
It would be so much more pleasant and less tiring if the relevant palette came to me automatically, where I am on the score, to avoid these completely unnecessary movements.
From memory, Sibelius does this.
