Hey there. I want to work in different scales rather than classical majors and minors. For example Harmonic Minor, or maqamic scales, yet the software allows me only to select classical scale key signature. Can't I assign different key signatures by myself? (like b flat, e flat and f sharp)

You can indeed create custom key signatures - see the Handbook under "key signature".
